The story of this rum begins more than 3 years ago and 3000km away from where the distillery now resides, a spirit distilled from molasses and cane sugar. The rum began its maturation in re-coppered 100 litre casks for 18 months in Perth, before embarking on a journey across the Nullabor to their new home in Melbourne. Travelling with them was the distiller Lex Poulsen, who was also travelling to his new home.
The rum was transferred for finishing in some of Boatrocker Brewing Co.’s first use ex-Bourbon casks and matured for a further 18 months. The result is a reflection of the approach to quality and likeminded love of great quality spirits and great barrels both Boatrocker & Hippocampus share. This rum represents the start of our future together, and the journey we are taking by crafting spirits that are both creative and delicious.
Aromas of caramelised sugar, molasses, vanilla and elderflowers. On the palate a light vanilla/oak sweetness, spiced gingerbread and muscovado sugar with a hint of nutmeg on the finish.
