An Australian wild ale, showcasing the best of Victorian summer apricots. A beer that is complex, funky, and full of fruit character.
This wild ale expresses all that is good about fresh, local apricots and their natural wild yeast. We sourced our fruit from an orchard in Victoria’s north east, and carefully selected a blend of barrels, ranging in age from 12 months to 36 months, to create a true expression of not only the fruit, but also of the orchard and our barrel wonderland here in Braeside. After 2 months of fermenting on fruit, the beer was racked and packaged. The result is a wonderfully funky and fruity wild apricot experience balanced by firm acidity.
