THE STORY
Our first release of Dark Cask begins with the same rich, unapologetically bold Ramjet base—dense, velvety, and layered with dark malt intensity. But from there, the journey diverges.
The stout is laid to rest in our ex-rum barrels—the very same casks that house and shape our spiced rum. These barrels have lived a full life before the beer ever touches them: first ageing rum in ex-bourbon casks, then nurturing it further for a minimum of three years as it develops depth, warmth, and complexity. By the time the stout enters the picture, the oak is saturated with character.
We were cautious at first. Rum and imperial stout don’t always speak the same language. There’s a fine line between complement and contrast when blending liquids of different intensity. But curiosity got the better of us.
And the result? It just works. Beautifully.
The esters from the rum bring lifted notes of tropical fruit and molasses warmth. The American oak lends soft vanillin sweetness and structure. And beneath it all, the Ramjet base holds firm—rich, luscious, and full-bodied, anchoring everything in deep chocolate and roasted malt.
But we didn’t stop there. To push this beer into something truly distinctive, we infused it gently with the same spice profile as our spiced rum: tonka beans for their warm, almost almond-like depth; orange peel for brightness and lift; native pepperberries for a subtle, aromatic spice; and whole vanilla beans to round and soften the edges.
The result is a beer that moves in layers—aromatic, decadent, and complex, yet impossibly smooth. Sweet spice, dark malt richness, oak, and spirit character all woven together into something that feels both familiar and entirely new.
Dark Cask isn’t just another variation. It’s a new chapter.
