THE STORY
Some barrels tell stories. Some become legends. This Pedro Ximénez cask is both.
Sourced from Spain, the barrel arrived carrying the unmistakable imprint of its past life—rich, sweet, and layered with raisin, fig, molasses, and dark chocolate. PX casks of this calibre are rare, prized for the depth they bring, and almost never seen this far from their origin.
It landed in Australia in between lockdowns, with a long future ahead of it.
We filled it with something just as distinctive: 2,000 litres of Ramjet stout, distilled and laid into the PX cask to begin its transformation. Over five years, the whisky matured slowly, pulling character from the PX-soaked oak—dark fruit, spice, and deep, rounded sweetness.
When the cask was finally emptied, it still had more to give.
A fresh batch of Ramjet stout went straight in, taking on not just the PX influence, but also the residual whisky character left behind in the wood. After 12 months of ageing, the result is PX Jet.
A beer with real depth—silky, rich, and layered. Raisin and fig lead into dark chocolate, burnt sugar, and oak, with a subtle warmth tying it all together.
This release comes full circle. Alongside PX Jet is the Ramjet whisky that came from the same barrel—two expressions of the same process, shaped by time, oak, and intent.
