Barrel Aged Gin

Barrel ageing helps bring complementary flavours and aromas to a single product. In this case we distilled a citrus forward gin, with some woody and earthy aromatics to help complement the American oak barrel character. The barrel was virgin oak and given a high char treatment (#3), which helps bring out vanillins, coconut and some delicate spice. The barrel lends a helping hand with the citrus and juniper, providing a wonderful depth to the spirit, and one that just screamed 'shake me into a sour!'.
